Taco Stuffed Shells

We were out of groceries last week and I came across this post on pinterest.com.  It looked great but I didn’t have everything to make it.  I revised the recipe to suit my meager pantry supply and made a great dinner.  My husband was pleasantly surprised by the meal, especially since he expected to eat brinner (breakfast for dinner).  My oh my what a pound of hamburger can make!

I started with a pound of hamburger, a can of black beans (for extra protein and to stretch the recipe), homemade salsa, Wildtee Roasted Tomatillo Sauce, Wildtree Taco Seasoning, large shells, and cheese.  Green onions would be delicious sprinkled on the top after the shells are out of the oven.

The salsa on the bottom of the pan gave the shells a bit of a kick while the tomatillo sauce on the top of the shells added a wonderful rich, smoky flavor.  A variety of sauces can be used – enchilada sauce, taco sauce – use whatever you have at home to make this Mexican twist on traditional stuffed shells.
